Setup:

Register an app at https://www.etsy.com/developers/your-apps → Create New App.
Note the Keystring (this is your x-api-key) and Shared secret.
Run OAuth2 PKCE flow with scopes transactions_r listings_r email_r shops_r (or write-scopes if needed).
Get the access token (1 hour expiry) + refresh token (long-lived).
Set:
- ETSY_API_KEY = the Keystring (a.k.a. x-api-key)
- ETSY_ACCESS_TOKEN = the OAuth2 access token
